Finger Lime Marmalade

Finger lime marmalade is sweet and a little bitter with beautiful floral notes. We enjoy this marmalade as a treat with cheese, biscuits and fresh fruit.

Ingredients

500g finger limes

Water

Roughly 500g white sugar


 

Method

  1. Slice the finger limes in half length ways removing any seeds. Thinly slice across the lengths into very thin pieces. Ensure to gather all of the little citrus pearls as well as the skins.

  2. Place sliced finger limes into a saucepan and just cover with water. Bring to the boil and then simmer for 30 minutes or until the skins are soft.

  3. Transfer mixture to a wide pan and add the sugar. The amount of sugar may vary depending on your taste, we like a little more sugar to cut through the bitterness. Stir consistently for 15 minutes or until set point.

  4. Spoon mixture into warm jars and seal. Refrigerate once opened.


Set point

To test the consistency of your marmalade, drizzle a teaspoon onto a cold plate and leave for 30 seconds. Once cool, run your finger through the centre. If it holds its shape and has small wrinkles through it, it is ready to place in jars.
